Photo: Jacky Ghossein W hen you're planning a party, one of the biggest questions is whether to have it at home or away. There's a lot to be said for either choice, the experts agree, but there are a lot of factors to consider. Having a party off-site can give guests access to a better range of alcohol and food than would be possible in a marquee in the backyard. It can save cleaning time and expense, be easier to secure against gatecrashers and a sufficiently spectacular location can add a wow factor that a view of your neighbours' plants can't match. Organising good food and drink can be the difference between a great party and one that has guests grumbling for months afterwards. More importantly, the right mix of liquids and solids can be the difference between a well-behaved gathering and a Bacchanalian swarm of obnoxious behaviour, vomit and sexual-harassment suits. The celebrity chef behind the popular Hugos venues throughout Sydney, Pete Evans, says when he is catering for a party, he brings out ''hunger busters'' at ''around the witching hour -- 11pm-2am''. ''These are substantial foods such as mini burgers and pizza that help soak up the alcohol and keep the party going,'' says Evans, whose latest book, My Party, has recipes for finger food and cocktails. Catering is also subject to fashion and trends, so Jatz and guacamole probably isn't going to cut it unless you're after a retro theme. ''Sustainability is hot. People want to know where their food is coming from and that it's grown with integrity. Central and South American food is also making waves,'' says Evans. And make sure you don't commit the biggest sin of all -- running out of, or oversupplying the drinks. It's a fine line being the perfect host and still staying responsible. It might be bad to have someone standing around looking for a glass of something to wash down their canape, but someone swaying about making a nuisance of themselves is far worse. Judi Hausmann, whose public relations firm represents technology giants such as Sony and Nokia, says ''food and drink should be relevant''. ''Make sure there's enough of it and, with the drinks, have the best you can afford.'' Hausmann's company targets technology writers whose inboxes are flooded with invitations for launches, so getting potential guests' attention is important. ''We always spend a lot of money on invitations,'' she says. ''I'm against the email invitation.'' Hausmann says picking a location is ''hugely important'', avoiding anywhere overexposed or ''too hard to get to''. ''I like to start with a blank space we can turn into our own,'' she says. Alternatively, you can use a space that really is your own. ''Some of the most ornate parties we cater for are weddings on properties,'' says the owner of A Gala Party Hire in Hornsby, Debbie Delany. ''They are often held in places that mean something to the couple.'' Delany, whose company hires party needs such as marquees, spit roasters, crockery and cutlery, says that while the downturn has meant more people are entertaining at home, things aren't so dire that many hungover hosts are willing to clean masses of dirty glasses and dishes the next morning. However, parties at home do bring some risk, particularly those held for teenagers. The managing director of Abacus Security Services in Kensington, Jonti Sarak, says in the age of social networking and mobile phones, a fun night can be ruined when uninvited guests show up after hearing about the night through a fast-moving grapevine. ''It happens with things like 15th and 16th birthday parties; someone puts up a photo on Facebook . . . saying they're having a great time and suddenly people with nothing to do with the party start showing up,'' Sarak says.
