The watchword for many of the Blue Mountains pubs seems to be simplicity.' Such variety . . . (clockwise from main) suns T he portion of the Great Dividing Range that makes up the Blue Mountains is often called the Sandstone Curtain but it could equally be called the Sandstone Sponge. The region is a massive visitor- trapping entity that absorbs many of the Sydneysiders who might otherwise venture further out to the central west and beyond. Part of the reason for this is that there are just so many places to stop, eat, drink and be merry. Composer Lionel Bart had the right idea in Oliver!, the stage version of the Charles Dickens novel, when he had the boys sing ''Food, glorious food! What is there more handsome?'' And what more handsome place to stop for a feed than the myriad pubs, cafes and restaurants of the Blue Mountains -- whether it's a bargain rump steak pit stop at actor Jack Thompson's stunning art deco Hotel Gearin in Katoomba for some star- gazing, or a dashi custard with smoked eel and scallop tartare at Kurrajong Heights' Lochiel House, awarded two hats and named Best Regional Restaurant by the Good Food Guide this year. One thing's for sure, you'll never go hungry in these mountains, for while getting away from it all is easy enough with 10,000 square kilometres of national park around you, the hamlets and villages tucked away up here are awash with buzzy cafes, homely pubs and some startlingly good fine-dining restaurants with an emphasis on produce both seasonal and local. Match that with a healthy local love of nosh in the shape of artisan food producers and provedores, along with regular foodie and wine events, and you have an area bursting with good- food choices. The watchwords for many of the Blue Mountains pubs seem to be simplicity and value for money. Finer dining is left to the restaurants and cafes while the pubs get on with providing hearty, well-cooked meals in comfy surroundings, which really do come into their own when those winter nights close in and the open fireplaces are crackling. Jack Thompson's Katoomba pub has the actor's own barbecue sauce for sale, the usual raft of meat offerings -- steak, schnitzel, burger -- and a small but surprisingly imaginative selection of vegetarian options that include a spicy channa dahl. The food is good, great value for money -- and it's just a short walk from Katoomba railway station. For the serious gourmet, however, Katoomba also plays host to both Echoes Boutique Hotel & Restaurant
