His latest menu favourites include battered bar cod with mushy peas and poached egg and, more recently, Coffs Harbour pearl perch with parsnip puree and curried octopus. ''To have pearl perch in blinding good condition isn't too common,'' he says. ''It tends to be caught in bycatch.'' Coffs Harbour is a treasure trove when it comes to fresh fish. Just ask 30-year-old Nicole Watts, a delivery driver for the town's Hux's Seafood store. Every Thursday, Watts rises at 4am to deliver yesterday's catch to country folk in Armidale. ''It's a three-hour drive through the fog on a pretty dangerous road, then a 9am setup in the van outside the wholesale market fruit store,'' she says. She sells until 5.30pm, rain, hail or shine, and is home about 9pm. Watts is happy to offer recipe suggestions to her loyal customers. ''My favourite this year is blue- eye cod fillets rubbed with powdered ginger, sweet chilli, sesame oil and soy, oven baked on a bed of cabbage,'' she says.
