(valid until 31st January 2012) (offer ends November 30th 2011) Tikka of approval Long-standing suburban restaurants work hard to deliver authentic flavours of the subcontinent to their loyal customers, writes Angie Schiavone. ‘Customers trust me to serve them dishes they will enjoy.’ Sanjay Sood, A J’s owner A fter 24 years in business, the people behind Billu’s Indian Eatery and Sweet House at Harris Park have noticed some changes in their ‘‘Aussie’’ diners. ‘‘When the restaurant opened, some customers couldn’t even eat a single chilli, and now they can handle it as well as me,’’ the manager Varinder Singh says. But that’s not to say diners crave new or especially hot dishes. As seems to be the case at many Indian restaurants, Billu’s customers are addicted to the approachably mild butter chicken and they wouldn’t be happy if it left the menu. Billu’s was one of the first Indian restaurants in a suburb now brimming with Indian eateries and grocery stores. A distinctive drawcard is the dazzling range of house-made sweets. ‘‘Whatever you get in India, you get at Billu’s,’’ Singh says. Surjit’s in Annandale is named after owner Surjit Gujral who has run restaurants in Sydney since 1981. Butter chicken is also a constant favourite and Gujral’s son, Rafan, is proud of Surjit’s version, which he says is made exactly as it should be: ‘‘chicken tikka half cooked in the charcoal tandoor and then finished off in the sauce’’. The use of the traditional charcoal tandoor oven is the key to getting the right flavour, Rafan says. At Surjit’s, with its impressive cricket memorabilia, the window at the back of the restaurant allows diners to see the cook working the tandoor oven. Christine Neale was a customer of one of Sydney’s more sophisticated stalwarts, Flavour of India at Edgecliff, before becoming its owner 14 months ago. Neale saw little need for change when she took over, simply adding a range of cocktails and a new wine list. Since opening in 1995, the restaurant has had the same chef, Hayat Mahamud, and the house specialty is chicken butter masala. 16 Tuesday, October 25, 2011 smh.com.au taste of india special report
