Just follow your particular passion and there'll be a tour to suit, writes Katrina Lobley. Australians, it seems, can't get enough of Vietnam. More than 260,000 Australians travelled there last year to trek through the rugged mountains and remote villages of the north, to explore war sites in the south, or to simply shop up a storm. Whatever your reason for heading to Vietnam, it's easy to find others happy to keep you company along the way. Food and pampering Renowned foodie Maeve O'Meara doesn't hesitate when asked her favourite Vietnamese dish. "The pho," she says, pronouncing it as "far"--atip learned from Peter Nguyen, who helps lead O'Meara's food tours through his homeland. "You breathe it in first and then you have this lovely, delicate flavour that just seems to keep all the ills of the world away," she says of the iconic noodle soup. O'Meara started food tours to Vietnam a decade ago. "Herbs are used in abundance and it's a really delicate cuisine -- it's very approachable Asia," she says. "Food is a really good way of tapping into a different, authentic side of life that perhaps you may not have in another sort of travel. We have people who dutifully come along to cooking classes and visit markets and they're never going to make another thing, but they've tasted things and had those great culinary light-bulb moments." Allison Beattie of Bateau Bay had her own light-bulb moment on her trip in March when she saw how the Vietnamese make rice-paper rolls. "We used a wet cloth to wet the rice paper roll -- we also found out you could use a spray bottle to spray the rice paper on both sides instead of going to the extreme of soaking it in warm water, dragging it out and so on," she says. Battlefields Gary McKay knows the tribulations of the Vietnam War more intimately than most. The career soldier, who was awarded the Military Cross and retired from the army as a lieutenant-colonel, will lead two Vietnam commemoration tours next year for Mat McLachlan Battlefield Tours. He was wounded in the Battle of Nui Le, Australia's last major action of the war. On day seven of the 16-day tours, McKay takes his group to the place where he was wounded to give them what must be the most poignant of briefings. The operator of the tours and a battlefield historian, Mat McLachlan, says McKay's insights aren't the only benefit in him leading the tours, which typically comprise Vietnam vets, families of veterans and others interested in learning more about the conflict.
