''Baking is not something they do at home very often because both parents are working and the weekends are so busy,'' Sutton says. ''Here they can make as much mess as they like, the kitchen is virtually indestructible.'' Argentinian-born pastry chef and sugar- crafting expert Carlos Lischetti was recently in Australia to teach decorating classes for Whimsical Cakehouse. He regularly made a mess of his parents' kitchen, having started baking and decorating cakes when he was just nine. ''Cake decorating in Argentina is huge,'' Lischetti says. ''I spent my afternoons watching cooking shows on television rather than playing soccer with my friends. I used to buy cake-decorating magazines with my pocket money. ''I'd practise and practise and use my sister as a guinea pig. I made all her birthday cakes -- not all of them were successful.'' Lischetti's parents were supportive of his cake dreams and let him sign up for a local sugar-crafting class. Following high school he enrolled in cooking school, which confirmed that pastry and cakes were his calling. He worked for the local baker in his home town of Rosario, in north-west Argentina, for seven years, regularly making the 600-kilometre round trip to Buenos Aires to attend sugar-crafting masterclasses. He then established his own business at home. Now considered a master of sugar craft (the art of making figures from sugar paste made of fondant and cellulose gum), Lischetti is based in Edinburgh. He has worked as a pastry chef for retailer Harvey Nichols, creates intricate specialty cakes for clients and travels the world teaching sugar crafting to chefs and keen home cooks. His recently released book, Animation in Sugar, comprises 14 projects for accomplished bakers and sugar crafters, among them a ballerina, the Queen of Hearts and a mechanical toy drummer. ''It takes time, a lot of trial and error and patience to become an expert decorator,'' Lischetti says. Timing is the key to success and the profitability of a cake-decorating business says Cutler, who also offers classes in the management of the small business cake industry, titled Biz Whiz. ''Cake businesses tend to grow organically; someone will make a cake for a party and then two or three guests will inquire about a cake for their next celebration,'' she says. ''Once this starts to happen it is hard to know what to charge or how to manage the business. Decorating cakes is about time -- you are not selling a sponge cake, you are selling your time and energy, just like a plumber or an electrician.''
