Inspiration behind the bar? ''At Palmer & Co, the bar crew are the focus,'' Campaign says. ''Merivale conducted a social-media search for staff, calling on people with a high a level of international experience.'' The most popular drink on the list? ''Cocktails are the focus. It is very much showmanship bartending, and customer service is key.'' The most important component of a small bar? ''Personalised customer service across the bar,'' Campaign says. ''There is definitely a new market here in Sydney, which bigger groups like Merivale are also now tapping into. There is a shift in the way drinking experiences are offered and it's been led by small bars.'' What do Sydney drinkers seem to want? ''Customers seem to want diversity,'' Campaign says. ''The opportunity to stop and have a drink on the way home seems to be growing, rather than people going out specifically to 'drink'.
