It has everything from rainbow-coloured pasta and tins of San Marzano tomatoes to rounds of pizza dough, pecorino cheese and traditional Italian candy. Make small talk with fellow foodies while peering into the cheese room to see creamy soft curd stretched into silky balls of mozzarella, or perch at the counter near the Galeria de Jamon, a veritable cathedral of cured meats. Salt Meats Cheese is the brainchild of Italian cousins Stefano di Blasi and Edoardo Perlo. They supply some of Sydney's top restaurants and sell direct to the public -- many of whom are groupies from The Grounds of Alexandria next door. Cross borders with a range of varieties and styles: the Prunotto Barbera d'Alba ($28) from Piedmonte; the Casa d'Ambra Biancolella ($36) from the island of Ischia; and the Sella & Mosca Vermentino di Gallura ($38) from Sardinia. Chianti has come a long way from the basket-bottle version that was a dinner-party staple in the '70s; the deliciously flavoursome and complex Chianti Classico Savignola Paolina ($29.50) is a Tuscan favourite, but there are entry-level chiantis from $20. Paesanella Recommended by Giovanni Pilu The late Umberto Somma was a forerunner of the country's artisan cheesemakers when, five decades ago, he began replicating Italian gastronomic traditions in a Marrickville factory. Today, Somma's legacy lives on, with his two sons, Joseph and Max, making the many Italian cheeses the business' enormous customer base demands. Somma was the first in Australia to make stracchino, smoked provolo, ricotta and mascarpone and, today, the humble Haberfield store, which opened 12 years ago, has developed Somma's vision to include delicacies such as burrata, buffalo mozzarella, baby bocconcini and mascarpone reale. La Macelleria Recommended by owner Robert Marchetti This Bondi Beach butcher has its own herd of hippies and hipsters who appreciate that the animals on sale were free to roam. What differentiates this butcher, salumeria and rotisserie is its range of dry-aged organic meat. Favourites include bistecca alla Fiorentina, gluten-free pork and chilli sausages, pre- prepared pork and veal polpetti, cacciatore salami, and Wagyu beef burgers. The lemon- and-myrtle chicken is another must.
